Bistro Chez Sophie
Smooth chocolate, sharp Parmesan and savoury balsamic vinegar perfectly coalesce in this surprisngly sweet and simple salad.
Ingredients
2 heads red leaf lettuce
1 square of semisweet baker’s chocolate
2 Tbsp yellow mustard (or Dijon)
1/4 cup balsamic vinegar
3/4 cup canola oil (or olive oil)
salt and pepper, to taste
2 Tbsp grated Parmesan cheese
Method
- Coarsely chop lettuce.
Place in a large bowl. Grate the chocolate over the leaves. Set aside. - In a separate bowl, whisk together mustard and vinegar. Add oil slowly to prevent separation. Season with salt and pepper to taste.
- Drizzle the dressing and sprinkle Parmesan over salad. Toss together with hands or spoon. Serve immediately.
Yields 4 to 6 servings
