Take plain roasted potatoes up a notch with loads of lemon, herbs and fresh dill.
Ingredients
1 cup olive oil
2 Tbsp lemon juice
1/2 tsp oregano
1/2 tsp Lawry’s seasoning salt
20 small Yukon gold potatoes, peeled
juice of one lemon
1/2 tsp fresh dill, chopped
Method
- Preheat oven to 350˚F.
- In a small bowl, whisk together oil, lemon juice, oregano and seasoning salt.
- In a roasting pan, toss together potatoes and herb mixture.
- Roast potatoes uncovered for 90 mins or until soft when pierced with a fork and golden brown.
- Squeeze lemon juice over potatoes. Garnish with fresh dill.
Yield 4 servings
