Puffed Wild Rice Square

Ingredients
Puffed wild rice

1 1/3 cups wild rice
2 Tbsp olive oil

Squares
3 cups plain mini-marshmallows
¼ cup butter, plus more for greasing pan
¼ cup good quality dark chocolate, melted

Method
Puffed wild rice

  1. Line a baking sheet with paper towel.
  2. Heat a sauté pan over med-high heat. Add 1 Tbsp oil. Add a grain of wild rice. If the rice puffs in a few seconds, it’s ready.
  3. Add 2/3 cup of wild rice and shake the pan over the heat to spread evenly. Move the pan continuously and stir until the rice has puffed. This is a very fast process.
  4. Pour over paper towel. Drain until cool, replacing towels if needed. Repeat with remaining oil and wild rice.

Squares

  1. In a large microwavable bowl, microwave marshmallows and butter in 30 second bursts until melted. Quickly stir in chocolate and puffed wild rice.
  2. Press into a buttered 9″ x 13″ pan. Cool.
  3. Cut into desired shapes. Yield 15 servings
