Whether a prelude to an evening of romance, or a punctuation to a fine dinner, these miniature meringue kisses make the ideal after dinner mint.
Ingredients
6 egg whites
1 1/2 cups sugar
1/2 tsp cinnamon extract
1/2 tsp peppermint extract
pink paste icing colour
Method
- Preheat oven to 175˚F.
- Stir egg whites and sugar together in metal bowl over pan of boiling water.
- Remove from heat. Beat on high until stiff peaks form. Fold in extracts and colour.
- Pipe meringues into kiss shapes with a star tip.
- Bake on parchment lined baking sheets for 1 1/2 hours until crisp, but not browned.
