The flavours of sugar and spice form the core of these fluffy buns, but including fresh Manitoba apples adds a sweet twist. These are the perfect wake-up treats on a chilly autumn morning.

Dough
5 1/2 cups all-purpose flour
1/2 cup of sugar
2 envelopes rapid rise yeast
3 large eggs
1 tsp salt
1/2 cup of water
1/2 cup of milk
1/4 cup butter or margarine
Apple Filling
2 large apples, chopped into small pieces
2 tbsp flour
3/4 cup of sugar
1/4 cup butter or margarine
1 tsp ground cinnamon
1/2 tsp nutmeg
Cinnamon Sugar Icing
3/4 cup of sugar
1 tsp ground cinnamon
1/2 tsp nutmeg
Method
Cinnamon Sugar Icing
- In a small bowl, Combine all ingredients until well blended.
Apple Filling
- In a medium sauce pan, combine apples, flour, sugar and butter.
- Bring to a boil over medium heat for 3 mins.
- Reduce to low heat and cook for 10 mins, while stirring.
- Stir in cinnamon and nutmeg.
- Cool completely.
Dough
- Preheat oven to 375˚F.
- In a large bowl, combine 1 cup flour, sugar, undissolved yeast, eggs and salt.
- In a pot on medium heat, warm water, milk and butter to 120-130˚F.
- Gradually add flour mixture.
- Using a hand mixer on medium speed, beat for 2 mins, scraping bowl occasionally.
- Stir in remaining flour to make soft dough.
- Knead on lightly floured surface until smooth and elastic.
- Cover for 10 mins.
- Divide into 2 equal portions and roll each portion into 12″x8″ rectangle.
- Spread apple filling evenly.
- Starting at the long end, roll up tightly as for jelly roll and pinch seams to seal.
- Cut each roll into 8 equal pieces.
- Place, cut sides up, in greased 9″ round pans.
- Cover, let rise in warm, draft-free place for 45 mins.
- Sprinkle with cinnamon sugar icing.
- Bake for 25-30 mins.
