Lest we forget that food is fun, these lettuce wraps serve as a tasty reminder. Sweet, yet savoury Asian sauces soak tender chicken, while crunchy noodles add terrific texture. Wrap, dip and devour this low-carb finger food to your heart’s delight.
1/2 cup hoisin sauce
1/3 cup barbeque sauce
2 Tbsp fresh lime juice
3 Tbsp sesame oil
1 tsp garlic powder
2 Tbsp ground ginger
1 Tbsp ground cumin
3 1/2 cups cooked chicken, shredded (can be any sort of leftover chicken)
3 cups crispy Asian noodles
1 cup diced tomato
1 cup diced roasted red pepper
1 cup diced red onion
30-40 leaves green leaf lettuce
- In a small bowl, whisk together hoisin sauce, barbeque sauce and lime juice. Set aside half of sauce mixture for dipping.
- In a medium-sized mixing bowl, combine sesame oil, garlic powder, ginger, cumin and other half of sauce blend.
- Add chicken, noodles, tomato, roasted red pepper and red onion. Toss mixture until evenly combined and coated.
- Serve immediately with lettuce leaf wrappers and dipping sauce.
