Vegan Caesar Salad

This vegan salad has a strong tahini taste and holds many nutritious benefits like vitamin B12 with its use of nutritional yeast, which can be found at most organic food stores.

Caesar Dressing
1 cup nutritional yeast
1/4 cup tahini, stirred well
1/4 cup tamari
1/4 cup lemon juice
zest of 1 lemon
1/8 cup Dijon mustard
2 cloves garlic, minced
1 cup water
1 tsp capers
1/4 cup olive brine

1 head Romaine lettuce
1 head red left lettuce
1 cup croutons
1 lemon, sliced


  1. Combine all ingredients in food processor, blend.
  2. Slowly add water while blending to create cream texture.
  3. Salt and pepper to taste.


  1. Chop greens.
  2. In a salad bowl combine greens and croutons, toss.
  3. Drizzle dressing over salad.
  4. Garnish with lemon slice.

Yield 6 servings
