Stella’s Café and Bakery
The ultimate weekend morning breakfast is made with egg batter-drenched, pan-fried brioche-perfect to sop up every sweet drop of Stella’s maple caramel sauce.
Ingredients
Maple Caramel Sauce
1 cup demerara sugar
1/3 cup unsalted butter
1/3 cup maple syrup
1/3 cup whipping cream
French Toast
4 large eggs
1/4 cup white sugar
1/2 tsp vanilla extract
1/2 cup homogenized milk
non-stick cooking spray
9 slices of brioche
3 tsp ground cinnamon
3 sliced bananas
3/4 cup wild blueberries
6 butter pats
3 orange wheels for garnish
Method
Maple Caramel Sauce
- Combine all ingredients in small saucepan over medium heat, stir constantly.
- Once at a gentle boil continue to stir while simmering for 5 min.
- Remove from heat, cool at room temp.
French Toast
- Thoroughly blend together first 4 ingredients.
- Spray heated grill with non-stick spray. Fully submerge each slice of bread into egg mixture and place on grill.
- Sprinkle bread with cinnamon.
- Cook to golden brown on each side.
Assembly
- Plate French toast. Top with a banana, 1/4 cup blueberries and 1/3 cup maple caramel sauce. Garnish with butter and orange wheel.
