This recipe is rich and tangy at once, with a heavy hit of lime.
Ingredients
Crust
2 cups graham cracker crumbs
2 Tbsp sugar
1/4 cup melted butter
Key Lime Filling
4 egg yolks
zest of 1 lime
1 cup of lime juice
2 1/2 cups sweetened condensed milk
Method
Crust
- Mix all ingredients in a bowl and using a large spoon press into a 10-inch pie pan.
- Bake in a 300°F oven for 10 minutes. Set aside.
Key Lime Filling
- In a mixer, place egg yolks and lime zest and whisk until fluffy.
- Drizzle in sweetened condensed milk. When all the condensed milk is incorporated lower the mixer speed and add lime juice. Mix for 1 more min.
- Pour mixture into the pie crust and bake in at 250°F oven for 20 min.
- Remove from oven and chill before serving.
- Serve with freshly whipped cream, mint and key lime slices for garnish.
